Banana Walnut Chia Seed Protein Pudding
This Chia Seed Protein Pudding has been my go to weekly breakfast! It’s so easy to meal prep in advance is is packed with protein and fiber to give you all the energy you need to start your day. I find it is light and digests better than overnight oats. For those monitoring your blood sugar, chia seed pudding is one of the top recommended breakfast ideas. You could also have this as a hearty snack or post workout recovery meal!
Optional to layer the ingredients or mix it all together! I am more about taste vs. appearance and just mix it all in at once!
Servings: 1
Ingredients:
2/3 cup unsweetened almond or coconut milk or raw organic milk
2.5 Tbsp chia seeds
1 Tbsp flaxseeds
1 Tbsp walnuts
1/2 serving vanilla protein (I like Equip or Truvani)
1/2 banana sliced
Cinnamon
Directions:
Pour your choice of milk into a mason jar.
Add chia seeds, walnuts, flaxseeds, protein powder and cinnamon. Stir well.
Top with banana slices.
Let sit in the fridge overnight.
Tips:
Start by making a single serving to see if you like it! If you do, feel free to prep 3-4 servings for the week—they last well in the fridge.
For variety, try adding apple slices or blueberries.
I’ll be sharing a post soon on choosing a protein powder, but for now, look for one with simple ingredients and no added sugars or artificial sweeteners. While it’s tough to avoid sweeteners entirely, a little stevia or monk fruit is fine, as they come from natural plant sources, unlike chemicals like sucralose, saccharin, or aspartame.
Chia seeds are packed with 11 grams of fiber per serving, and this recipe is low in net carbs. Flaxseeds are another great source of healthy fats and fiber, benefiting both blood sugar and cholesterol.
Walnuts, chia seeds, and flaxseeds all provide healthy fats and omega-3 ALA, a precursor to DHA and EPA found in fatty fish.
Cinnamon is a tasty addition that helps regulate blood sugar—I add it to everything, even my morning coffee!
